On one of my previous blogs (Christmas with Mari and Maddy) I had mentioned Mari's Gooey Butter Cake and said that I'd try to get the recipe and post it. Here it is and here's my WARNING: It IS sinfully delicious! It will put on pounds and it's really hard to stop eating! I can't believe that this recipe originated in St. Louis and that people in other states really haven't heard of it (I guess it's like the Toasted Ravioli thing)!
GOOEY BUTTER CAKE
1 box Butter Recipe cake mix
1 stick melted butter
2 eggs, beaten Another 2 eggs, beaten
1 8 oz package softened cream cheese
1 box powdered sugar
Mix cake mix, melted butter and 2 beaten eggs till well blended. Spread in well greased 9x13 baking pan. Mixture will be very thick! Mix another 2 beaten eggs, softened cream cheese and powdered sugar until well blended. Spread on top of cake mixture. Bake about 50 min. at 325 degree oven. You may sprinkle with powdered sugar after the cake cools.
serves 12 or more
This is a VERY RICH dessert. It will look a little underdone when, in fact, it is done. Melts in your mouth and goes down like butter:)

Wow I did not know that Gooey Butter cake originated here in St. Louis. It is one of my favorite desserts and I have to make a concentrated effort to not buy one every time I go grocery shopping. I like it so much that I will often give half of the dessert to my friend to take home, just so I will not eat the whole thing by myself.

So you know what I mean! I ate at least half of the cake that my friend brought over and it was about 3 times bigger than the ones they sell at the grocery stores! Yes it did originate here and I could be wrong here but I think it was a Dierberg's recipe. I'll have to find out for sure now that I said that.

LOL! The cake mix is just yellow with butter in it but it will say on the box. I had no idea that it was just here that they sold it!

I haven't had Gooey butter cake in years. I quit eating it when I found out I was diabetic. Now, after reading this I am craving it. I haven't found a sugar free version that compares to the real thing.

If you like the Gooey Butter Cake in the grocery store, you should try it at Park Avenue Coffee in Lafayette Square. They have 60 Flavors. They sell it by the slice so you do not have to buy a whole cake and it WAY Fresher and WAY WAY Better the then the grocery store kind. www.ParkAvenueCoffee.com 314.621.4020. I've always heard about Lafyette square and I used to deliver mushrooms and other gourmet foods and spices up on Lafyette but I've never stopped to eat anywhere. It sounds like a good thing to do for lunch one day:)
